How to make rainbow ice cream video

This is a really quick no-churn ice cream recipe anyone can make if they have 5 minutes spare. There’s similar ice cream available in supermarkets but it’s a lot more fun to make your own. You will also avoid all the extra ingredients that get added to retail ice cream.

The inspiration behind this ice cream

The office I work in at home doubles as my daughter’s bedroom. Directly behind my computer screen is a mammoth painting she did when she was five. As you can see, it’s a rainbow. Every kid loves rainbows and it seems like half of the adult world loves them too. So I decided a rainbow ice cream would probably be just as popular!

I used the common food colours for my ice cream that are available practically everywhere: blue, yellow, green and pink. Mix these colours to create some unique ones.

Rainbow ice cream is super easy to make

I made this no churn ice cream in under 10 minutes. I’ve made a quick summary of the steps in the picture below. It’s really a case of combining the condensed milk with vanilla then folding it into whipped cream. Then the fun part is colouring it and adding some extra tasty stuff on top! What you need to make rainbow ice cream

  • 1 can condensed milk (397g)
  • 1 tsp vanilla
  • 500ml cream
  • food colouring of your choice
  • extra sprinkles and candy to decorate

The steps

Combine condensed milk and vanilla in a bowl.

Add cream to a bowl and beat until stiff peaks form.

This cream is ready to be transformed into rainbow ice cream.

Fold in the condensed milk gently.

Add equal amounts of the mixture into separate bowls and mix in colouring. Now spoon the colours into a suitable container and add to the freezer.

I then add the sprinkles and cover with cling wrap before freezing.
